This is a favorite northern Indian meal. The sauce (use the link for the recipe) is a little time-consuming, but you can make the whole dish in advance.
4 to 8 pieces boneless. skinless chicken breasts or thighs
2 tbsp olive oil
salt and pepper
1 recipe Korma Sauce
Heat olive oil in a frying pan, and add chicken when hot. Cook over low heat about 10 minutes on a side or until a meat thermometer reads at least 160°F/83°C. Spoon on heated Korma Sauce.
Serve With: Basmati rice and a vegetable or salad.
