Bulgur and Vegetables Indian Style

Serves 4

1 recipe Bulgur Pilaf

1 clove garlic, minced
1 cup sliced fresh mushrooms (3 ounces)
1 small zucchini, quartered lengthwise and sliced
1 medium tomato, chopped
1/4 cup chopped green pepper
1/3 cup sliced carrots

1 tsp. mustard seed
1 tsp. cumin seed
2 tsp. sesame seeds
1/2 tsp. turmeric
3 tbsp sunflower oil

  1. Heat the oil over medium high heat in a wok.  Add the seeds and stir a minute until seeds are slightly cooked.  Add turmeric.  
  2. Add cut up vegetables and stir fry several minutes until 3/4 done.  
  3. Add the cooked bulgur and spices as below, or to taste:

1 tsp. salt
1 tsp. chili powder
1 tsp. cumin powder
1 tsp. coriander powder

  1. Mix well, remove from burner and let stand 4 - 5 minutes.  Serve.
