White Bean and Tomato Salad

Serves 4

1 14 oz. can Canellini beans, rinsed and drained

1 pint (8 oz.) grape tomatoes, halved

4 scallions, chopped

2 tbsp. extra virgin olive oil

1 tbsp. fresh lemon juice

Kosher salt and pepper to taste

Combine ingredient in a medium bowl and toss. Store in refrigerator for up to 2 days.
