Tamari Roasted Almonds

Makes 2 cups

This is a wonderful snack. We keep a bowl of them on the kitchen table all the time. The recipe calls for using a toaster oven to roast the nuts quickly; if you don’t have a toaster oven, spread the marinated nuts in a single layer on a baking sheet in a pre-heated 350 F./175 C. oven. Roast at least 15 minutes or until nuts are very brown, but not burned.

You can make larger quantities by marinating 2 cups of almonds at a time. If roasting in a toaster oven (not a single layer), roast for 15 minutes, then turn the nuts and roast another 15 minutes until very brown and crisp, but not burned.

2 cups raw almonds

3 tbsp tamari or soy sauce

  1. Place raw nuts in a re-sealable plastic bag. Add the tamari, seal and allow to marinate for from 30 minutes to 12 hours or more. (We prefer the longer period.)
  2. Spread the marinated nuts on the roasting tray of the toaster oven.
  3. Place the tray in the cold toaster oven and turn the bake control to 350 F/175 C. Roast for 15 minutes. Remove from the oven and stir. Roast for another 15 minutes. Do not allow the nuts to scorch or burn; adjust the time to taste. The cooled nuts should be crisp, not chewy.
