Lemon Tuna Mayo Pasta

Serves 4

225g/8oz tagliolini or linguini (Barilla No. 13)

175g/6oz mayonnaise

125ml/4oz milk

1 tsp. dill weed

2 can chunk light tuna in brine, drained and flaked

3 tbsp. capers, drained

Rind of 1 lemon, grated, plus a squeeze of juice

Salt and pepper

  1. Cook the pasta according to directions and drain.
  2. Meanwhile, in a bowl, use a fork to beat together the mayonnaise, dill, then stir in the tuna, capers, and lemon rind.
  3. Add a squeeze of lemon juice and season with salt and pepper.
  4. Add the tuna mixture to the pasta, toss until well coated and serve.
