Herbed Leg of Lamb
Serves about 8
Pre-heat oven to 350°
1 tbsp. salad oil
6 lb. leg of lamb
1 clove garlic, peeled and mashed
1 tsp. salt
1/2 tsp. each powdered ginger, thyme, sage, and marjoram
1/2 cup each dry white wine and water
- Rub salad oil evenly over leg of lamb.
- Combine garlic, salt, ginger, thyme, sage, and marjoram; crumble evenly over the meat.
- Place in a roasting pan and insert a meat thermometer into the thickest portion of the meat.
- Add wine and water to the roasting pan. Roast, uncovered, in a 350° oven for 2 1/2 hours or until the thermometer registers 160°; baste occasionally with pan juices.
