Grilled Onion and Sausage Pasta
Serves 4
You can do this one on the grill or on the top of the stove. It’s really good either way.
1 red onion, peeled and sliced in ½ inch rounds
2 tbsp. olive oil
Salt and freshly ground black pepper
12 ounces smoked sausage, split lengthwise
2 cloves garlic, minced
1 14-ounce can diced tomatoes
½ cup heavy cream
8 ounces penne pasta
¼ cup fresh basil, chopped
- Bring 4 quarts water to boil and add 1 tbsp. salt. Reserve ½ cup pasta water. Cook penne according to package directions, about 10 minutes. Drain and set aside in the pot..
- Meanwhile, brush onion slices with oil and grill over hot fire (or, cook in large, non-stick skillet) with sausages 3 to 4 minutes per side. Tent with foil and set aside.
- Heat remaining oil in the skillet until shimmering, add garlic and cook until fragrant, about 30 seconds. Add tomatoes and ¼ tsp. salt and cook until tomatoes begin to break down, 5 to 7 minutes. Add the cream and cook until sauce is thickened, about 5 minutes.
- Pour the sauce into the pot with the penne, over low heat. Roughly chop the onions and sausages and add, with any accumulated juices, to the pot. Season with salt and pepper. Stir to be sure all is heated, and serve.
