Grilled Asparagus Medley

Serves 8

We cooked this on our Weber Q-Grill in a wok basket over direct 400°F heat for 25 minutes. It was delicious.

1 lb. (500g) fresh asparagus, trimmed

1 each sweet red, yellow and green pepper, julienned (seeds and webs removed)

1 cup sliced mushrooms

1 medium tomato, chopped

1 medium onion, sliced

½ cup sliced ripe olives, drained

2 tbsp. olive oil

1 tsp. minced fresh parsley

¼ tsp. salt

¼ tsp. pepper

¼ tsp. lemon-pepper seasoning

¼ tsp. dill weed

Pre-heat grill to 400°F.

  1. In a large bowl, combine vegetables, olives and garlic. Drizzle with oil and toss to coat.
  2. Sprinkle with remaining seasonings and toss to coat. Place in grill wok.
  3. Grill, covered for 25 minutes or so, turning two or three times until vegetables are ‘melted’.
  4. Serve over Brown Rice or Bulgur.
