Easy Summer Salad
1 package (10 ounces) frozen green peas, cooked, drained
1 can (14 ounces) garbanzo beans, drained, rinsed
1/4 cup sliced pitted ripe olives
1/4 cup vegetable oil
2 tbsp cider vinegar
1/2 tsp. salt
1/8 tsp. garlic powder
1/8 tsp. pepper
1/4 cup sesame seeds
- Combine green peas, garbanzo beans and olives in medium-size bowl.
- Place remaining ingredients except lettuce leaves and sesame seeds in jar with tight-fitting lid; cover and shake.
- Pour over pea mixture.
- Refrigerate uncovered at least 30 minutes.
- Line 4 salad plates with lettuce. Top each with pea mixture; sprinkle each salad with 1 tbsp. of the sesame seeds.
