Beans and Sausage

Serves 4

2 tbsp olive oil

1 lb. polish sausage, sliced

2 onions, chopped

2 cloves garlic, minced

2 cans (1-lb. each) white beans, drained

1 cup sliced, pitted ripe olives

1 jar (7-ounce) pimiento, drained and chopped*

2 tbsp red wine vinegar

1/2 tsp. red-pepper sauce, or to taste

1/2 tsp. dried oregano, crumbled

  1. Heat oil in large skillet.  Add sausage, onions and garlic. Cook until onions are soft.  
  2. Stir in beans, olives, pimiento, vinegar, red-pepper sauce and oregano.  Heat through.  Serve hot.

Fresh sweet red pepper may be used.  Cut about 1/2 pepper into strips and fry with sausage.
